Josh Marks from "MasterChef" is one of the top 18 contestants in Season 3 of the FOX reality cooking competition series. He is a 24-year-old U.S. Army contract specialist from Jackson, Mississippi.

Who was your first cooking inspiration?
My grandmother. Every time I go to her house she cooks me something different. I usually sit with her while she cooks to catch up, while also watching her every single move as she maneuvers around her kitchen cooking all types of meals effortlessly. She also taught me the importance of sharing food with others and that really gave me a strong passion for food and cooking.
What is the first dish you ever mastered?
Turkey chili. It really allowed me to understand how to properly balance the amount of spices and the combinations I put into food. I use this self control while seasoning in everything I cook. Mastering this chili also taught me when to stop seasoning food so I can let the other ingredients speak for themselves.
What is your favorite thing to cook?
My favorite thing to cook would have to be my signature dish, etouffee. It's a great base to add anything you like and it's versatile enough to make anyone like etouffee. I like trying different variations like shrimp and chicken or crawfish and andouille sausage. I'm drooling just thinking about it!
What did you learn as a contestant on "MasterChef"?
I learned all kinds of things at "MasterChef," such as the importance of plating and presentation, how to run a kitchen, how to lead other cooks, and most importantly, how to move like a chef in the kitchen. That's why I can now proudly call myself a chef and not just a home cook.
